Yesterday was a pretty good day. We played outside a lot, my youngest took a three-hour nap, I got some time to myself, and everyone got along pretty well… until about 5 o’clock.
Then everything fell apart.
My sister (the Queen) has two little ones, Princess and Little Prince, and Little Prince, who is about a year and a half, decided he did not want to be put down and could only be held by the Queen or else he would cry and cry and cry. Princess needed some alone time and my Maverick was determined to NOT let her have it.
A LOT of annoying, and whining, and crying, and tattling was going on and the Queen and I were trying to make dinner.
It was a bit ridiculous.
So instead of dinner taking 30 quick minutes, it took an hour, a very long and draining hour.
I don’t know why I am surprised, this is pretty typical of the dinner making process for me, but it still gets to me every time. It’s one of the reasons I LOVE making dinner so much, then add two more toddlers to the mix…. Bleh. I’m exhausted just thinking about it.
It turned around though when I enlisted the littles’ help shucking the corn… they LOVED it! And they did a great job, they love to help… they even did a great job cleaning up all the husks.
Anyway, so we stuck them all outside on the front porch to eat so that they wouldn’t make a big mess inside because we were having vegan sloppy joes and corn on the cob.
They were happy.
They all ate.
And the vegan sloppy joes weren’t bad either… they were so yummy. They are made with lentils instead of ground beef. The kids loved them and even had seconds and us grown-ups loved them, even my carnivorous husband.
My sister found the recipe by Minimalist Baker at minimalistbaker.com/vegan-sloppy-joes/
Super easy and loved by all!
